The Wii has something called the VI Trap Filter, which sharpens composite video by eliminating excess color information from the video signal. If you turn it off, which is possible on the homebrew app Genesis Plus GX, you can do the "waterfall blending" with adjacent pixel columns and blend dithering patterns together. On the other hand, you get significantly sharper composite video than average if you keep it on.
The component picture is just there as a control, but it doesn't look quite as good as it actually does on the TV.
The PS3 also has the option for this over Composite and possibly S-Video in its menu: It's called "Cross Color Reduction Filter", and turning it ON causes the blurrier result while turning it OFF causes it to sharpen. This is because it's worded as "Prevents rainbow artifacts in Composite / S-Video signals", which is something that can be potentially caused by filtering the excess color information out with the VI filter.
