i think previously we would delineate important Concepts in the text with 'these' or "these" or even making the text bold but now capitalization is somehow easier and doesn't look as pretentious? and you can still "denote a verbatim quote" or critically pick apart some part of another text that is 'doubtful' to you, while the Big Topics get signposted in their own way. also you can /italicise/ and do _other_ *stuff* and mix them all together and somehow people still know exactly! what you meant
i think a lot of people follow some variation of it too, you can often tell by having proper nouns left uncapitalised, but certain phrases are given title case to denote their significance (or ironically lack of significance)
