I'm at the point now where unless someone's Specific about their gender or bits or whatever, I just go by what I see.
Like, unless I'm told otherwise, the person on the other end of the communication might as well just be a big friendly anthro pokemon or mythological creature of their choosing.
And this isn't suspension of Belief or anything, it's legit just easier this way for data management purposes.
