so I found this amazing recipe, which is basically chicken (cut into 1" cubes), vegetables, chicken stock, and spices, and the result is uniformly fantastic *except* that the chicken keeps coming out dry and chewy. is there something obvious I'm doing wrong?

@mmsword *nodnod* okay... Spouse prefers breast meat to thighs; I personally think thighs have a better taste. I'll give the thighs a try and see how it works, and what Spouse thinks. thank you! :D

Sure! Adding ingredients according to cook time is common, though it goes against the "slow cooker easy" style of cookery.
Baking it separately and adding it in after is a sure-fire way of making that work. Just make sure you add some chicken stock or bouillon with the veggies so it keeps that chicken flavor. ^^
Also an option: Cube the chicken and pan-fry just enough to sear (and thus seal) the outside. ^^
