tip: black pepper is a much better spice than you probably think. Get yourself a pepper grinder, even store-brand pepper you can usually buy in little plastic grinders that work perfectly acceptably.

The chemicals responsible for its flavor, piperine and chavicine, both evaporate very quickly, so freshly-ground black pepper has a much stronger and better taste than pepper that's already been ground into flakes
