cinnamon is the bark of the cinnamomum verum tree, which is difficult to grow and picky about climate. cassia is the bark of cinnamomum cassia, a related but hardier tree that's easier to grow

in the US, cassia can legally be labelled and sold as cinnamon, but I believe it can't in europe
