almost forgot about our bread! hopefully it won't be too affected by sitting a bit longer - it sounds like it mostly rises in the oven - and hopefully we can still get an accurate sense of what it means to vary the amount of yeast...

Think it turned out fine, even with the extra sitting!

...it actually looks really nice - maybe we should let it autolyse/rise for the extra hour every time! We'll have to test that separate from varying how much yeast we use.

@packbat bread is really cool, there's a lot of things you can do with it to experiment and have it still come out pretty good! there's also a lot you can do and have it come out bad, but then you've learned something and the ingredients aren't terribly expensive

have you seen youtube.com/watch?v=FJxJhbCFsc by the way? some interesting bits of food science about what happens from using different amounts of different ingredients in bread (specifically pizza crust, but it'll generalize to other breads too)

@packbat sure--no need to watch it now, or at all! might be a helpful thing at some point though, or at least interesting

the presenter even bakes a loaf with no yeast at all, and it turns out predictably awful because the rest of the recipe isn't meant to be an unleavened bread, but it's neat to see the result anyway
