@monsterblue there's one good use for american cheese actually

it contains a good amount of sodium citrate, which is really good for emulsifying cheese and making it melt really smooth

putting one or two slices of american cheese in with a bunch of real cheese is the secret to making really good cheese dips

@monsterblue also, sodium citrate has the chemical formula Na₃C₆H₅O₇ which spells out nacho which is great because it's a crucial ingredient in nacho cheese
