The best explanation I've heard — and it's kind of a stretch even so — is this. Status-curing spells in FF tend to end in "na" (at least in the original Japanese). Poisona is "cure poison", Blindna is "cure blind", Stona is "cure stone", and so on. So Esuna is "cure esu", which is エス in katakana and is just the name of the letter S. For "status". So "Esuna" is "cure Statuses".
