@Leucrotta Sounds quite similar! I'd be using the crockpot, to make the cooking trivially easy - it's next to impossible to overcook at those temperatures, and that'd probably work really well to let hot peppers mellow out to contribute a more complex flavor profile to the final chili, if I add more in the final hours as well. =:9
