@xinjinmeng I did the preparatory stuff for https://www.sbs.com.au/food/recipes/roasted-chicken-jerusalem-artichoke-and-lemon - there were some things I couldn't get (jerusalem artichokes, saffron threads) and I forgot to get thyme, so this is kinda an approximation. The cookbook says to let it marinate at least two hours, preferably overnight.

apparently they are INCREDIBLY pricey, and also QFC has them though Safeway doesn't.
I've cooked with saffron before and I've never seen a recipe use this much. 💸
@xinjinmeng I've never cooked with saffron before! The whole cookbook has a mix of stuff, and a lot of it is very much poor person food.

@Leucrotta @xinjinmeng Ow! Indeed, a *teaspoon* of saffron threads? I've only find saffron in pharmaceutical-petite packages of literally maybe five threads carefully sealed in a tiny plastic pouch, sold within a glass jar for multiple dollareuropounds)
I understand it's much cheaper in India, but AFAIK it's not really exported. Could be worth scouting out any South Asian markets, though.
Does look like a gorgeous recipe, all the same. And I am duly enlightened as to the name of "Jerusalem" artichokes!

@porsupah @xinjinmeng if it’s that pricey- and it’s certainly not where I can easily get it - I can go without. Somehow I don’t think a lemon-garlic-tarragon (used dried tarragon) thing is going to be less flavorful for lack of saffron. The “they’re called artichokes because they taste similar” was another substitution; I couldn’t find Jerusalem artichokes, but of course I have artichoke hearts around! I can’t imagine that tasting bad either.

After 12 cloves of garlic and a whole lemon, the saffron would just be lost.
The only problem with your substitution is that "Jerusalem artichokes" aren't actually artichokes - they're tubers, they're closer to potatoes. That said, chicken with artichokes is delicious so you do you. 🍽

@xinjinmeng @Leucrotta Mmm, I was a bit caught by surprise when I tried Jerusalem artichokes for (possibly) the first time a couple years ago, on seeing them in the supermarket. Good, though! Reminiscent of a fine-grained cousin of water chestnuts.
Regardless, yes - it'll be a *tasty* dish and I must now not get hungry thinking about it. ^_^;
