@GraySpots this stuff is very thoroughly deep fried. Most recipes I've used roast the stuff - both probably resolve any of the bitterness.

@Leucrotta How does one cook eggplant? My only real experience with it is watching Hell's Kitchen and learning that if it's undercooked, it's fucking bitter.
