Been experimenting with making keto chocolate cake. Base recipe is one egg and two tablespoons each of splenda and sugar-free 100% cocoa powder. All ingredients are whisked together, then put into a coffee mug that has been sprayed with pam, then microwaved for one minute.
First cake I tried making yesterday came out okay, but a little dry. Today I tried making a second cake, which added in half a teaspoon of olive oil. The result was that it came out much more moist than the first one :3

I think tonight I'll try it with some sugar-free whipped cream on top :3
