@Balinares Hun, I don't mean to be contrary, but there's a local Senegalese chef who's made his version for Michelin-starred restaurants and just opened up a pop-up here amid rave reviews...
I realize it's a pretty unassuming food in general, though. Still. The single best thing I ate in my entire time in Seattle was a side dish of "ordinary" rice and peas from a Puerto Rican restaurant... It is, in the immortal words of Eric Clapton, in the way that you use it. ;)
However, Thieboudienne is quite real and I desire it intensely...
