@Felthry I think we like monterey jack - usually pepper jack - as a melting cheese for something like homemade pizza; for general purpose, a sharp white cheddar is really versatile and tasty. We're not super into the annatto flavor of yellow cheeses, but we'll eat it if that's what we got.
