the CO2 usually returns to gas fairly slowly, but faster when there are more nucleation sites - for example, dust or rough surfaces
(this is why the first bubbles of boiling happen at fixed points on a surface of a pot - those are nucleation points)
the surface of mentos is very rough
and so much gas is created after a mento is dropped in that soda erupts from the bottle
