Technically, the "correct" spelling is חֲנֻכָּה‎. :}

There are at least six valid transliterations, and both of those are in the set. Hebrew places its syllable breaks differently than English does—or the Romance languages, for that matter—and once you have that big a difference, it’s all kinda wibbly. Pick a spelling that correspond to your regional accent of choice, and run with it. :)
