Not sure why I find salad so profoundly unexciting. I love fried vegetables, love kimchi, like cooking greens, love vegetables on pizza. Take the same stuff I’m happy to eat and put it in a TJs salad to eat on a workday and it’s joyless and grim.

@Leucrotta Chemical reactions. Cooking breaks down the structural polysaccharides in vegetables to sugars our bodies can use and thus find delicious.
