@cuddlemelon@mastodon.social I usually use olive or vegetable, because they're right next to the stove and sesame oil tends to burn quickly so it's way better used as a dressing/add in on stuff.

thewoksoflife.com/hainanese-ch gives exactly NO info on what oil is good, but it does have better ideas about proportion than "eh, just dump a lot of garlic and ginger in, I like garlic and ginger."
