Plenty of the He dragons I know have laid clutches of eggs before and lots of the She dragons I know have Bad Dragon toys between their legs. And those definitions and physical configurations are subject to change.
Why? Because we're polymorphing arcane shapeshifters with overpowered brains who like Diversity in their sexual experiences.

I used to feel really weird and intrusive in normie queer spaces, because like... Dragons are known to come in herm varieties in Furry.I don't make a huge deal about it and everything is good in Furry Spaces.

I feel you on the gender stuff, and a lotta my friends are expressing the same thing. They're not Male, Not Female, and really wish that was Enough.
Or that they had an Affirmative name, title, designation, Something.
Non-Binary alone is like... Such a blanket term. Like okay, and then there's the, uh.... Etcetera! Yaaay, we're inclusive!
