@AdamP See, my interpretation of this is not the dish, but the specific memory in the chef that it invoked: his first time as a cook, where he fell in love with the art of cooking. We see the photo of him as Employee of the Month at a burger joint on the wall.
She chose that not because it was a cheeseburger but because it reminded him of a time he cooked out of love, instead of out of trying to win the approval of people he hates.

@AdamP Well, they specifically say that the reason he relates to her is because she's a service worker, and they also explicitly say that the audience pointedly does not appreciate what he's serving; he sends them a bread plate with no bread and she's the only one who thinks it's bullshit. So I can't say I really agree.
