I'm increasingly not convinced that typical jrpg levelling systems increasing HP by a lot and defense at the same time really makes it ambiguous how each stat contributes to survivability and I wonder if it wouldn't be more intuitive to do it differently

Like, in the systems they derive from (Final Fantasy = D&D), changes in defense stats are relatively rare once you hit a certain baseline, but your main survivability gains come from additional HP each level.
