Ah, gotcha. Yeah, my plan is to do pretty much the same, use keto recipes to give me more low-carb options.
I found a website for low-carb vegan eating, so I figured I could combine recipes from that site, vegetarian keto recipes, and other high-plant, low-carb recipes for a more balanced (less eggy) diet.
My goal is to eat less than 156 carbs/day, so I can take the same amounts of fast-acting insulin as my long-acting prescription.

@Sparrow I'm not doing full keto, just relatively low-carb with many keto recipes, but have heard of diabetics doing it. I was a semi-vegetarian (seldom ate meat) before, but have been eating meat the last week to give myself more options. I might settle back into meatless stuff when I discover what works for me. I know there is /r/vegetarianketo/ . I think you have to really like eggs to do veggie keto.
