This is a good thread, but it's a lot.
Ultimately comes down to that we put up with a lot of bad design because it's our only choice, we're walled in by SV's culture of back-rubbing over crippled innovation, and are losing things in the process.
I've complained before about feeling like W10 is dumbed down to not scare the technologically incompetent, but there's things beyond this that I've not considered before. Things like altering user behaviour because the options simply don't exist in modern software/UI.
It's hard to say what can be done about it. Maybe it's just that we need to praise legit good design more often. Not "good enough" design.

@Taylor Good gravy. I use Windows 10 occasionally (not as a daily driver) and the lack of options bugs me, but... I had never even considered people not thinking of the options being a thing elsewhere, thinking that level of... condescension is normal... that's pretty scary. :/
