So, the good news is that I've finally got a bread recipe I'm comfortable calling my "basic loaf." It's enriched, but it's not _sweet_, and it's still solid enough to make good sandwiches even without toasting. And it toasts well!
The bad news is that I'm going to die of carb overload because now I can _bake my own bread_ and as a bird this can only end in tears.

From here, the plan is to buy more loaf pans and start giving away bread to people.
