Oops. I accidentally made "red" creole when just tossing some cajun chicken thighs, peppers, onions, tomatoes, sausage and celery into a skillet...
At least what my family called "shrimp" or red creole when I was a kid.

Damn.. kinda wish I'd made a roux to thicken it up... or had some okra.. either one of those would be like the only think of to make it tastier!

rice is all done.. tossed some home made sweet-hot pepper relish in my bowl with it..

Verdict: Tasty!
