sidebar: 'authenticity' in food is a completely modern invention of capitalism meant to guilt people into buying worse things, at a premium, in an effort to consume in a more 'real' way.

the reality of cooking is that people make what they can make out of what they have on hand. take alfredo sauce, for an example, and this is gonna be a thread, because this is a thing that regularly gets my goat.

@hystericempress Once again you are a woman after mine own heart. <3 I have a very similar rant about beans in chili. I _prefer_ my alfredo with just cheese and butter, and I _prefer_ my chili without beans, but assigning "validity" to any food that is not actively toxic or inedible is ridiculous. I condemn everybody who's ever complained about food authenticity to live off of budae jjigae for the rest of their blinkered lives.
