Each extended movie has so much more footage that helps scenes make sense... probably less important in the first movie but much more so in the 2nd and 3rd.
It's like half an hour extra in each movie.
There are some scenes that get glossed over in the theatric releases that feel mildly unfinished which are more fully explained in the extended editions.
I hope you see them.

@ThatDamnCat Good to know! I always appreciate more backstory. It's kinda cool watching it after the Hobbit, because the continuity in terms of backstory and asides is pretty good despite the 10-15 year difference.
