it's kind of disappointing that "parmesan" can mean so many different things (in the US, due to poor food naming regulations around stuff like that)--half the time it's not any good, but real parmigiano-reggiano (at least *that* name is properly protected) is incredibly expensive

why is colby jack the only marbled cheese you can get, is there something about those two cheeses that just works together mechanically so they don't separate apart or something?

@Felthry Could potentially have to do with complementary flavor profiles? It is kind of strange though. Cheddar in and of itself could easily be marbled, given it comes in yellow and white varieties. May also have something to do with being recognized and marketed AS a marbled cheese, and having other cheeses marbled would just make things confusing. I'm no cheese wiz though (pun absolutely intended :P) so I have no idea myself

@Kilroy Making a marbled cheddar wouldn't do anything flavor-wise though, just the aesthetics. Colby and monterey jack are very different cheeses, on the other hand
