I like my oatmeal cookies crispy, sharp and caramelized, almost brittle, neither dry nor greasy.

Here's thins I made based on a recipe for maple-brown-sugar-oatmeal cookies meant to evoke everyone's favorite hot breakfast mush.

I kept the dough cold, pressed them flat and baked four minutes more than the recommended time, ensuring crisp buttery flavor all the way through.

And the Quebecois "Cooking Grade" maple syrup I used? Oh wow.
