@Kusimanse my recipe had me scrape out all the white parts, boil with some baking soda then blanche with cold water before pan frying. It’s bitter (as expected) but the flavor balanced with beef and sauce. But I think it may have contributed to last night’s sleeplessness?

@frost it was! The bitter melon is actually bitter, but it really *does* kinda balance and wind up being a really nice flavor with the beef and the sauce.
