maybe it's that they're complex enough to be interesting, but simple enough that you can fully understand the workings of one
boost converters are especially nice, but i also like flyback converters and have recently been warming up to the rare negative-in/negative-out buck converter (which no one actually makes controllers for so you have to trick a flyback controller into doing it)

this youtube downloader frontend we've been using lately (to accumulate c64 music) has a really neat feature we've never seen in anything else
its URL entry isn't a textbox, it's a button and clicking on it just pastes whatever's in the clipboard over whatever's currently in it
which is i think good design? because you're never going to be manually typing in the video url, it saves you a ctrl-v, and saves having to select whatever's in the box to overwrite it if you're doing multiple things
