This specific train is a tamper, which means it consolidates the ballast beneath the tracks to allow for higher speed and safer running, as a sort of half way step to what modern high speed lines do with just having a concrete track bed.

I wound up cutting okra into smaller pieces which the recipe I found after the fact says NOT to do but honestly, short of stopping at the Lebanese grocery store, there is just no way to find smaller, middle eastern style okra.

I did not buy a giant burrito.

Instead, I bought groceries, then fried tofu to add to salads later, stewed pork to cook with preserved vegetables later, and cooked a vague attempt at Persian okra stew. Probably not very authentic, will likely clean me out, but tastes pretty good imho.
