Put Vietnamese fish sauce in Italian food.

Seriously. I mean, it's virtually the same as ancient-Roman garum sauce and has every business being there.

It really brings out the umami flavors in tomatoes, butter, and hard cheeses-- I just had a bowl of gnocchi in a sauce made from all of the above and it's the best thing I've eaten in weeks.
